Solutions for the management of blast chilling temperature installations to reduce bacterial proliferation after cooking (food refrigeration up to 3°C) or for the maintenance of organoleptic properties during the freezing phase, avoiding the formation of ice macrocrystals inside (freezing at -18 °C).

CONTROL CHARACTERISTICS:

  • Blast chilling cycle consisting of two phases: blast chilling and conservation
  • The blast chilling phase in refrigeration or deep freezing ends by reaching the core temperature of the product or by time
  • The conservation phase begins at the end of the blast chilling phase
  • Differentiated set-points for each phase
  • Centralized or single-compressor refrigeration system management
  • Time defrost management
  • For monocompressor circuit management:
    • compressor timing
    • condenser (on/off or modulating)
  • It can be use only as a conservation cell
