Solutions for the management of blast chilling temperature installations to reduce bacterial proliferation after cooking (food refrigeration up to 3°C) or for the maintenance of organoleptic properties during the freezing phase, avoiding the formation of ice macrocrystals inside (freezing at -18 °C).
CONTROL CHARACTERISTICS:
- Blast chilling cycle consisting of two phases: blast chilling and conservation
- The blast chilling phase in refrigeration or deep freezing ends by reaching the core temperature of the product or by time
- The conservation phase begins at the end of the blast chilling phase
- Differentiated set-points for each phase
- Centralized or single-compressor refrigeration system management
- Time defrost management
- For monocompressor circuit management:
- compressor timing
- condenser (on/off or modulating)
- It can be use only as a conservation cell
